Ingredients
- 1 Tablespoon margarine or butter
- 1 Tablespoon plain flour
- 1 Cup milk
- 1/2 Cup cheese
- 100g Pasta
Method
1. Melt margarine or butter in saucepan
2. Stir in flour and cook over heat for about 1 minute. This mixture is called a roux.
3. Add milk all at once and stir continuously over heat until mixture boils and thickens.
The trick to this recipe is to not burn the roux, (which is a very easy thing to do!) I ended up ruining the first few rouxes but eventually I got there. The gelatinisation is important for this recipe to make the nice thick white sauce.
